Pancake Casserole

A warm, golden-brown pancake casserole studded with juicy berries and a hint of sweetness from maple syrup, perfect for brunch gatherings.

  • 2 cups pancake mix
  • 1 1/2 cups milk
  • 2 eggs
  • 1 cup mixed berries (blueberries, strawberries, or raspberries)
  • 1 cup yogurt (plain or flavored)
  • 1/4 cup maple syrup
  • Butter or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter or oil.
  2. Combine pancake mix, milk, and eggs in a mixing bowl, stirring gently until just blended.
  3. Pour half of the pancake batter into the prepared baking dish.
  4. Layer half of the mixed berries on top of the batter.
  5. Add dollops of yogurt across the berries and drizzle with maple syrup.
  6. Pour the remaining pancake batter over the yogurt and berries.
  7. Top with the remaining berries.
  8. Bake for 25-30 minutes or until golden brown.
  9. Let cool slightly before serving. Enjoy warm!

Notes

Dust with powdered sugar or drizzle extra maple syrup for added sweetness. Pairs well with crispy bacon or sausage.
