Pancake Mini Muffins

Pancake Mini Muffins combine the fluffiness of pancakes with the convenience of muffins, making them perfect for breakfast, snacks, or dessert.

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp granulated sugar
  • 1/4 tsp salt
  • 1/2 cup milk (whole or substitute)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp melted butter (cooled)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your mini muffin tin with nonstick spray or liners.
  2. Whisk together the flour, baking powder, sugar, and salt until they’re well combined.
  3. In a separate bowl, whisk the milk, eggs, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing.
  5. Fill each muffin cup about two-thirds full with the batter.
  6. Bake for 12-15 minutes or until golden brown. A toothpick should come out clean when inserted.
  7. Serve warm, topped with syrup, fruits, or any toppings that make your heart happy!

Notes

For variations, try adding mashed banana, chocolate chips, or nuts.
