Pancake Poppers

Pancake Poppers are a delightful twist on traditional pancakes, making for a fun and easy breakfast or snack.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk + 1 tablespoon vinegar (or buttermilk)
  • 2 tablespoons oil
  • 1 egg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease your mini muffin tins with cooking spray.
  3. In a small bowl, combine the milk and vinegar, allowing it to sit for about 5 minutes until it curdles.
  4. Stir in the oil and egg into the curdled milk mixture.
  5. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  6. Pour the wet mixture into the bowl with the dry ingredients and stir gently until just combined.
  7. Fill each mini muffin cup about one tablespoon full with the batter.
  8. Bake for approximately 8 minutes, or until golden and puffy.
  9. Allow to cool for a few minutes before carefully removing from the tins. Serve warm and enjoy!

Notes

Serve warm with maple syrup, fresh berries, or yogurt. Store in an airtight container for up to 2 days at room temperature or refrigerate for up to a week.
