Pancake Sausage Casserole

A delightful casserole combining the fluffiness of pancakes and the savory appeal of sausage, perfect for brunch or family dinners.

  • 2 cups Pancake Mix
  • 3 large Eggs
  • 1 cup Milk
  • 1 pound Breakfast Sausage
  • 2 tablespoons Butter
  • 1/2 cup Maple Syrup
  • 2 cups Fresh Fruit

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
  2. In a skillet over medium heat, cook the breakfast sausage until browned and crumbly. Drain excess grease and set aside.
  3. In a large bowl, whisk together pancake mix, eggs, and milk until smooth.
  4. Spread cooked sausage evenly across the bottom of the greased baking dish.
  5. Pour the pancake batter over the sausage and drizzle with maple syrup.
  6. Bake for 25 to 30 minutes, or until golden brown and a toothpick comes out clean when inserted.
  7. Allow to cool for a few minutes before slicing and serving.

Notes

For a lighter version, substitute turkey sausage. Let the pancake batter rest for 5 minutes for fluffier pancakes.
