Peanut Butter Banana Baked Oatmeal

A delightful breakfast option marrying peanut butter with the natural sweetness of ripe bananas, perfect for busy mornings.

  • 1 large spotty banana (mashed)
  • ½ cup creamy all-natural peanut butter
  • 3 tbsp real maple syrup (or honey)
  • 1 ¾ cups unsweetened almond milk or oat milk
  • 1 large egg (or 1 tbsp ground flaxseed with 3 tbsp of warm water for vegan option)
  • 2 tsp vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch square baking dish.
  2. Mash the banana in a large bowl until smooth.
  3. Whisk in the peanut butter, maple syrup, almond milk, egg (or flaxseed mixture), and vanilla extract until well combined.
  4. Gradually add in the oats, cinnamon, baking powder, and salt. Stir until evenly mixed.
  5. Pour the mixture into the prepared baking dish, spreading it out evenly.
  6. Bake for 35 to 45 minutes, or until the top is golden and the center is set.
  7. Allow it to cool for 5 minutes before slicing.
  8. Drizzle with extra peanut butter and toss in some sliced bananas if desired. Enjoy!

Notes

For nut allergies, substitute peanut butter with sun butter or tahini. For a vegan option, use flaxseed instead of egg.
