Peanut Butter Banana Muffins

Deliciously moist muffins combining the rich flavors of peanut butter and ripe bananas, sweetened naturally with maple syrup.

  • 2 ripe bananas
  • 1 cup natural peanut butter
  • 1/2 cup pure maple syrup
  • 1 cup oat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C), and line a muffin tin with paper liners.
  2. Mash the ripe bananas in a medium bowl until smooth.
  3. Stir in the natural peanut butter and pure maple syrup until well combined.
  4. Whisk together the oat flour, baking soda, and salt in a separate bowl.
  5. Add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Fold in the mini chocolate chips, if using.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the muffins to cool before serving.

Notes

For nut-free, substitute almond butter; for oat flour, blend rolled oats until fine.
