Pesto Eggs

A delightful dish combining pesto, eggs, and goat cheese for an impressive breakfast or brunch.

Ingredients

  • 4 Eggs
  • 1/2 cup Pesto sauce
  • 100g Goat cheese
  • 2 slices Crusty bread
  • 1 tbsp Olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat a skillet over medium heat and add a splash of olive oil.
  2. Pour in the pesto sauce and warm it for about one minute.
  3. Gently break the eggs into the skillet, resting them atop the warm pesto.
  4. Allow the eggs to cook for 3-4 minutes until the whites are set and yolks remain runny.
  5. While the eggs are cooking, toast the crusty bread to desired crispiness.
  6. Spread goat cheese on the toasted bread.
  7. Plate the pesto eggs on the goat cheese spread and sprinkle with salt and pepper to taste.

Notes

For variations, consider using feta cheese or adding sautéed vegetables.
