Pesto Grilled Cheese

A comforting sandwich featuring gooey mozzarella cheese, vibrant pesto, and hearty sourdough bread, perfect for lunch or dinner.

Ingredients

  • 4 slices of sourdough bread
  • 4 tablespoons of pesto sauce
  • 4 slices of mozzarella cheese
  • 4 slices of tomato
  • 2 tablespoons of butter, softened
  • 1 tablespoon of olive oil

Instructions

  1. Spread 1 tablespoon of pesto sauce evenly on one side of each slice of sourdough bread.
  2. On the pesto side of two slices, lay down one slice of mozzarella cheese.
  3. Place two slices of tomato on top of the mozzarella cheese on each slice.
  4. Add another slice of mozzarella cheese on top of the tomatoes for extra cheesy goodness.
  5. Finish each sandwich by positioning the remaining slices of sourdough on top, with the pesto side facing down.
  6. Spread 1 tablespoon of softened butter on the outer sides of each sandwich.
  7. Heat olive oil in a skillet over medium heat.
  8. Carefully place the sandwiches in the skillet and cook for about 3–4 minutes on each side until the bread is golden brown and the cheese melts.
  9. Remove the sandwiches from the skillet and let them cool for a minute.
  10. Cut the sandwiches diagonally and enjoy warm.

Notes

Serve with creamy tomato soup or salad for an ideal meal. Store leftovers in an airtight container for up to 2 days.
