Chicken Stir-Fry

A quick and nutritious chicken stir-fry combining tender chicken, vibrant mixed vegetables, and rice in a delicious soy sauce.

Ingredients

  • 1 pound of chicken breast, diced
  • 2 cups of mixed vegetables (carrots, bell peppers, broccoli)
  • 1 cup of rice (white or brown)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Fresh herbs (basil or parsley) for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Toss in the diced chicken breast and season generously with salt and pepper. Cook for about 5-7 minutes until golden brown.
  3. Stir in the mixed vegetables and sauté for another 4-5 minutes until they soften.
  4. Add your chosen rice to the skillet, stirring well to combine.
  5. Pour the soy sauce over the mixture and stir everything together. Cook for an additional 2-3 minutes.
  6. Remove from heat and sprinkle with fresh herbs before serving.

Notes

Feel free to swap out the vegetables based on seasonal availability or personal preference. For extra heat, sprinkle in red pepper flakes.
