Pioneer Woman Breakfast Casserole

A hearty breakfast casserole combining sausage, eggs, and cheese, perfect for brunch gatherings.

  • 1 pound breakfast sausage
  • 6 green onions, chopped
  • 1 red bell pepper, chopped
  • 10 large eggs
  • 1 1/4 cups heavy cream
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Tabasco (optional)
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 cups sharp cheddar cheese, shredded
  • 1 (30 ounce) package frozen shredded hash browns, thawed

Instructions

  1. Preheat your oven to 350°F and lightly spray a 9×13-inch baking dish with nonstick spray.
  2. Cook the breakfast sausage with the chopped red bell pepper and the white and light green parts of the green onions in a large skillet over medium-high heat until browned and soft.
  3. Whisk together the eggs, heavy cream, Dijon mustard, Tabasco (if using), salt, black pepper, and half of the remaining green onions in a large bowl.
  4. Stir in 1 ½ cups of cheddar cheese and the hash browns, then fold in the cooled sausage mixture until combined.
  5. Pour the mixture into the prepared baking dish.
  6. Cover with foil and bake for about 50 minutes.
  7. Remove the foil, sprinkle remaining cheddar cheese on top, increase oven temperature to 400°F, and bake for an additional 10-15 minutes until browned.
  8. Let sit for 10 minutes, garnish with the remaining green onion tops, and serve warm.

Notes

Feel free to substitute the breakfast sausage with turkey sausage or a plant-based alternative. Customize with different cheese or vegetables for added flavor.
