Pioneer Woman’s French Toast Casserole

A rich and creamy French toast casserole made with brioche, eggs, and cream cheese, perfect for breakfast or brunch gatherings.

  • 1 loaf of sliced brioche bread
  • 6 large eggs
  • 2 cups milk
  • 8 oz cream cheese, cut into chunks
  • 1 tsp cinnamon
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • Optional: Fresh fruits, nuts, or whipped cream for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a baking dish and layer the sliced brioche bread evenly.
  3. In a mixing bowl, whisk together the eggs, milk, cinnamon, maple syrup, and vanilla extract until smooth and well combined.
  4. Pour the egg mixture over the arranged bread slices, ensuring each piece is generously coated.
  5. Scatter the cream cheese chunks on top of the bread mixture.
  6. Cover the dish with plastic wrap and refrigerate overnight.
  7. Bake the casserole for 40-45 minutes, or until golden brown and set in the center.
  8. Serve hot, garnished with fresh fruits, nuts, or a drizzle of additional maple syrup.

For a dairy-free version, use almond milk and a vegan cream cheese alternative.
