Pizza Eggs

A delightful twist on traditional breakfast that combines fluffy eggs with savory salami and melted cheese.

Ingredients

  • 3 eggs
  • 60g (approx. 2 oz) reduced-fat cheese, grated
  • 1 tbsp passata (about 15g)
  • A few slices of salami (approx. 20g)
  • Mixed herbs, to top

Instructions

  1. Heat a non-stick frying pan over medium heat.
  2. Sprinkle half of the grated cheese evenly into the pan.
  3. Allow the cheese to melt until the edges become slightly crisp and golden.
  4. While the cheese is melting, crack the eggs into a bowl and whisk them until smooth.
  5. Once the cheese is melted, pour the whisked eggs over the crispy cheese base. Cover with a lid and let it cook until the bottom is firm and golden.
  6. Carefully use a spatula to flip the egg-cheese base in the pan.
  7. Spread the passata over the cooked side of the eggs, layer on the salami slices, and sprinkle with the remaining grated cheese.
  8. Cover the pan again and let it cook until the cheese has melted and toppings are heated through.
  9. Gently remove the Pizza Eggs from the pan, sprinkle with mixed herbs, and enjoy immediately.

Notes

Serve hot with a side salad or whole-grain toast. Leftovers can be stored in an airtight container in the fridge for up to 2 days.
