Protein Breakfast Burritos

Delightful breakfast burritos filled with scrambled eggs, sausage, black beans, and cheese, perfect for a hearty morning meal.

  • 4 large eggs
  • 1 cup cooked and crumbled sausage or bacon
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or your preference)
  • 1/2 cup bell peppers, diced
  • 1/2 cup onions, diced
  • 4 large whole wheat tortillas
  • Salt and pepper to taste
  • Optional: salsa, avocado, or hot sauce for serving

Instructions

  1. Heat a large skillet over medium heat. Add diced onions and bell peppers; sauté for about 5 minutes until softened.
  2. Stir in the cooked sausage or bacon along with the black beans, cooking for an additional 2-3 minutes until everything is warmed through.
  3. In a separate bowl, whisk together the eggs, adding salt and pepper to taste.
  4. Pour the egg mixture into the skillet, stirring gently. Continue cooking until the eggs are fully scrambled, roughly 3-4 minutes.
  5. Remove the skillet from heat and stir in the shredded cheese until it’s fully melted and combined.
  6. Lay out the tortillas flat and divide the egg mixture evenly among them, placing it in the center of each tortilla.
  7. Roll each tortilla tightly, making sure to fold in the sides as you go to secure the filling.
  8. If storing for later, wrap each burrito in foil or plastic wrap and freeze until ready to use.
  9. To reheat, unwrap and microwave for about 2-3 minutes until hot throughout.

Serve with fresh salsa, sliced avocado, or a drizzle of hot sauce for extra flavor.
