Protein Breakfast Pancakes

Fluffy and nutritious pancakes packed with protein, perfect for busy mornings or post-workout fuel.

Ingredients

  • 50g protein powder
  • 2 eggs
  • 1 cup oats
  • 1 banana
  • 1 cup Greek yogurt
  • Milk or almond milk (as needed)
  • Optional toppings (berries, nuts, honey)

Instructions

  1. In a bowl, mix together the protein powder, oats, and eggs until well combined.
  2. Mash the banana and fold it into the mixture until fully incorporated.
  3. Heat a non-stick skillet over medium heat. Pour in the batter to form pancakes, aiming for about 4 inches in diameter.
  4. Cook each pancake for approximately 2-3 minutes on each side, or until golden brown and fluffy.
  5. Serve hot with a generous dollop of Greek yogurt and a selection of optional toppings.

Notes

For a dairy-free option, swap Greek yogurt for a dairy-free alternative. Try gluten-free oats if needed.
