Pulled Pork Carnitas Street Tacos

  • 2 pounds pork shoulder
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 orange, juiced
  • 1 lime, juiced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Corn tortillas
  • Fresh cilantro, chopped
  • Chopped onions for topping
  • Sliced radishes for serving
  • Lime wedges

Instructions

  1. In your slow cooker, combine the pork shoulder, chopped onion, minced garlic, orange juice, and lime juice.
  2. Add the chili powder, cumin, and season with salt and pepper to taste.
  3. Cover the slow cooker and cook on low for 8 hours, until the pork is tender and shreds easily.
  4. Once cooked, use two forks to shred the pork into bite-sized pieces.
  5. Serve the shredded pork on warm corn tortillas, topped with fresh cilantro, chopped onions, sliced radishes, and a squeeze of lime.
