Pumpkin Baked Oatmeal

A cozy and nutritious baked oatmeal combining pumpkin and spices, perfect for breakfast or a sweet treat.

  • Avocado oil or neutral oil (for greasing)
  • 2 cups rolled oats
  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup canned pumpkin puree
  • 1 cup milk of choice
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ⅓ cup maple syrup or honey
  • Chocolate chips, nuts, raisins, or topping of choice (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and generously grease an 8×8 baking dish with oil.
  2. Combine the rolled oats, pumpkin spice, baking powder, and salt in a medium bowl. Mix these dry ingredients well.
  3. Add the canned pumpkin puree, milk, eggs, vanilla extract, and maple syrup or honey to the dry mixture. Stir until everything is fully combined.
  4. Spread the oatmeal mixture evenly in your prepared baking dish.
  5. Bake for 30–35 minutes, or until the edges puff up, the center is firm, and the top is golden brown.
  6. Cool for about 10 minutes before slicing it into squares.
  7. Serve warm, either with a dollop of yogurt, a splash of milk, or simply on its own.
