Quick Blueberry French Toast Casserole

A delightful and easy casserole filled with fresh blueberries and custardy bread, perfect for brunch or family gatherings.

  • 1 loaf of day-old brioche or challah bread, cubed
  • 2 cups fresh blueberries
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter or cooking spray for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or cooking spray.
  2. Evenly distribute the cubed bread in the baking dish, then sprinkle fresh blueberries on top.
  3. In a large mixing bowl, whisk together the eggs, milk, maple syrup, vanilla extract, ground cinnamon, and salt until combined.
  4. Pour the egg mixture over the bread and blueberries. Make sure all pieces are soaked.
  5. Cover the dish with foil and let it sit for about 30 minutes at room temperature. For a deeper flavor, refrigerate overnight.
  6. Bake the casserole (covered) for about 30 minutes. Remove the foil and bake for an additional 15-20 minutes, until golden brown and set.
  7. Allow it to cool slightly before serving.

Notes

Top with powdered sugar, maple syrup, whipped cream, or ice cream for an indulgent touch. Store leftovers in an airtight container in the refrigerator for up to three days.
