Quick Blueberry French Toast Casserole

A delightful and satisfying dish featuring a warm, fluffy casserole with tart blueberries and rich maple syrup, perfect for any breakfast occasion.

  • 6 slices of bread, cubed
  • 2 cups of fresh blueberries
  • 4 eggs
  • 2 cups of milk
  • 1/4 cup of maple syrup
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of salt
  • Powdered sugar for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt until well combined.
  3. Grease a 9×13 inch baking dish and arrange the cubed bread in an even layer. Sprinkle the blueberries over the bread.
  4. Pour the egg mixture over the bread and blueberries, pressing down gently to help the bread absorb the liquid.
  5. Cover the dish with foil and refrigerate for at least 30 minutes, or ideally overnight.
  6. Bake uncovered for 45-50 minutes, until golden and set in the center.
  7. Serve warm, dusted with powdered sugar if desired.

For a budget-friendly option, feel free to swap fresh blueberries with frozen ones. Use day-old bread for the best texture and consider topping with granola or nuts.
