Quick Spinach Egg Casserole

A simple and flavorful casserole made with eggs, spinach, and cheese, perfect for breakfast, lunch, or dinner.

  • 6 large eggs
  • 1 cup milk
  • 2 cups fresh spinach, chopped
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced onion
  • Salt and pepper to taste
  • 1 teaspoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk the eggs and milk together until well combined.
  3. Stir in the chopped spinach, shredded cheese, diced onion, and add salt and pepper to taste.
  4. Heat the olive oil in a skillet over medium heat. Sauté the onions until they’re translucent.
  5. Pour the egg mixture into the skillet, and gently stir for about 2 minutes until everything is well combined.
  6. Transfer the mixture to a greased baking dish.
  7. Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is golden brown.
  8. Allow the casserole to cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or oven until heated through.
