Sausage Pancake Bites

Delicious bite-sized treats combining pancakes and sausage, perfect for brunch or any meal.

Ingredients

  • 1 cup pancake mix
  • 1 cup milk
  • 1 large egg
  • 1 cup cooked sausage, crumbled
  • 1/2 cup shredded cheese (optional)
  • Syrup for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. Stir together the pancake mix, milk, and egg in a mixing bowl until just combined; try not to over-mix.
  3. Fold in the crumbled sausage and shredded cheese, if using.
  4. Spoon the batter into the muffin tin, filling each cup about three-quarters full.
  5. Bake for 15 to 20 minutes, or until golden brown; check for doneness with a toothpick.
  6. Let the bites cool slightly before removing them from the tin.
  7. Serve warm, drizzled with syrup if desired!

Notes

For extra fluffiness, let the batter sit for a few minutes after mixing. Use pre-cooked sausage crumbles for quick preparation.
