Savory Breakfast Protein Biscuits

Delightful savory biscuits packed with cheddar, ham, and cottage cheese for a protein boost.

  • 1 cup cottage cheese
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup grated cheddar cheese
  • 1 cup diced ham
  • 1/4 cup chopped chives
  • 1 egg (for egg wash, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk together the flour, baking powder, and salt until well combined.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the cottage cheese until everything is mixed well.
  5. Fold in the grated cheddar cheese, diced ham, and chopped chives until evenly distributed.
  6. Turn the dough onto a floured surface and knead gently until it just comes together.
  7. Pat the dough to about 1-inch thickness and cut out rounds or squares using a biscuit cutter or knife.
  8. Arrange the biscuits on a baking sheet lined with parchment paper.
  9. Brush the tops with beaten egg if you like a golden, shiny finish.
  10. Bake for 15-20 minutes or until the biscuits are golden brown and puffed up.
  11. Allow to cool slightly before indulging.

Store in an airtight container at room temperature for up to two days, or freeze for longer storage.
