Savory Lentil Breakfast Bowl

A nutritious and hearty breakfast bowl featuring earthy lentils, spices, and topped with a perfectly poached egg.

  • 1 tbsp Olive Oil
  • 1 medium Yellow Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 cup Brown or Green Lentils, rinsed
  • 4 cups Vegetable Broth
  • 1 tsp Dried Thyme
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Ground Cumin
  • Salt and Black Pepper to taste
  • 1-2 Large Eggs
  • 2 cups Fresh Spinach
  • 1/2 Avocado, sliced or mashed
  • 1 tbsp Crumbled Feta Cheese (optional)
  • 1 tbsp Fresh Parsley or Cilantro, chopped
  • Pinch of Red Pepper Flakes (optional)

Instructions

  1. Heat the olive oil over medium heat in a large skillet.
  2. Add the finely chopped onion and sauté until translucent, about 5 minutes.
  3. Incorporate the minced garlic and cook for another minute until fragrant.
  4. Sprinkle in the dried thyme, smoked paprika, and ground cumin. Toast the spices for about 30 seconds, then add the rinsed lentils.
  5. Pour in the vegetable broth and season with salt and pepper. Bring to a gentle simmer, cover, and cook for 25-30 minutes until lentils are tender but not mushy.
  6. Meanwhile, poach or fry the eggs to your desired doneness. Sauté the fresh spinach for 1-2 minutes until wilted.
  7. To serve, divide the lentil mixture into bowls, top with sautéed spinach, a poached egg, sliced or mashed avocado, crumbled feta (if using), fresh herbs, and a pinch of red pepper flakes.
