Savory Potato Burritos

A delightful fusion of comfort food and creativity, these Savory Potato Burritos are filled with crispy tater tots and cheesy potatoes, making them perfect for any occasion.

  • 2 medium russet potatoes, peeled and diced
  • 1 to 1 ½ cups frozen tater tots
  • 3 large flour tortillas (burrito-size)
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon chili powder (optional)
  • Salt and black pepper, to taste
  • ¾ cup shredded cheddar cheese
  • Small handful fresh cilantro, chopped (optional)
  • Sour cream or Greek yogurt, for serving

Instructions

  1. Begin by parboiling the diced potatoes in salted water for about 5-7 minutes, or until just tender. Drain and let them cool.
  2. Preheat your oven to 425°F (220°C) and bake the frozen tater tots for 20-25 minutes until they’re golden and crispy.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until softened. Stir in the minced garlic and sauté until fragrant.
  4. Add the parboiled potatoes to the skillet. Gently mash them while incorporating the smoked paprika, cumin, and chili powder (if using). Season with salt and pepper, and cook until everything is golden, around 5-7 minutes.
  5. Fold the baked tater tots, shredded cheddar cheese, and chopped cilantro (if desired) into the potato mixture until well combined.
  6. Warm the tortillas briefly, then fill each tortilla with the potato mixture and roll them tightly into burritos.
  7. For a crispy finish, optionally cook the burritos seam-side down in a skillet for about 2-3 minutes on each side until golden.
  8. Serve the burritos hot, accompanied by a dollop of sour cream or Greek yogurt and any sides you like.

Notes

For added texture, mix in some finely chopped bell peppers or corn into the potato mixture. Swap out cheddar cheese for pepper jack for a spicy surprise.
