Shakshuka

Shakshuka is a vibrant dish featuring poached eggs in a savory tomato sauce, perfect for breakfast or brunch.

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 large potato, peeled and diced
  • 1 can (14 oz) diced tomatoes
  • 4 eggs
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Heat the oil: Start by heating 2 tablespoons of olive oil in a skillet over medium heat.
  2. Sauté onions: Add the diced onion and sauté until it softens, about 5 minutes.
  3. Add garlic & potato: Stir in the minced garlic and diced potato. Cook until the potatoes are tender, around 8 minutes.
  4. Incorporate tomatoes: Pour in the can of diced tomatoes, and season the mixture with salt and pepper. Let it simmer for about 5 minutes.
  5. Create wells for eggs: Using your spoon, create wells in the tomato mixture, and crack an egg into each well.
  6. Poach the eggs: Cover the skillet. Poach the eggs for 5-7 minutes until the whites are set but the yolks remain runny.
  7. Garnish & serve: Top with fresh herbs and dish up hot!

Notes

Fresh herbs enhance flavor, and using high-quality canned tomatoes will improve taste.
