Simple Breakfast Quesadillas

Delicious breakfast quesadillas filled with fluffy scrambled eggs and gooey cheese, perfect for busy mornings.

Ingredients

  • 2 large flour tortillas
  • 3 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. Whisk together the eggs and milk. Season with salt and pepper.
  2. Heat a non-stick skillet and melt the butter.
  3. Pour the egg mixture into the skillet and scramble until cooked.
  4. Layer half of the cheese on one tortilla.
  5. Add the scrambled eggs on top, followed by the remaining cheese.
  6. Place the second tortilla on top and cook for 2-3 minutes until golden.
  7. Flip the quesadilla and cook for another 2-3 minutes until golden and melted.
  8. Slice into wedges and serve immediately.

Notes

Serve with salsa, sour cream, or avocado slices. Store leftovers in the fridge for up to 3 days.
