Simple Breakfast Quesadillas

Quick and satisfying breakfast quesadillas filled with scrambled eggs and cheese, perfect for busy mornings.

Ingredients

  • 2 large flour tortillas
  • 3 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a bowl, whisk together the eggs and milk. Season with salt and pepper.
  2. Heat a non-stick skillet over medium heat. Add the butter and let it melt.
  3. Pour the egg mixture into the skillet and scramble until fully cooked. Remove from heat and set aside.
  4. If necessary, wipe the skillet clean. Place one tortilla in the skillet on medium-low heat.
  5. Sprinkle half of the cheese over the tortilla. Add the scrambled eggs, then top with the remaining cheese.
  6. Place the second tortilla on top of the filling.
  7. Cook for 2 to 3 minutes until the bottom is golden brown. Carefully flip the quesadilla.
  8. Cook the other side for another 2 to 3 minutes until golden and the cheese is melty.
  9. Remove from heat, slice into wedges, and serve immediately.

Notes

Serve with fresh fruit, salsa, or guacamole. Can be stored in an airtight container in the fridge for up to three days.
