Instructions

  1. Start by toasting the slices of bread until they’re golden brown and crisp.
  2. Drizzle a small amount of olive oil into a non-stick skillet over medium heat.
  3. Crack the eggs into the skillet. Cook them according to your preference—sunny-side up or scrambled.
  4. Once the toast is done, spread the ricotta cheese evenly over each slice.
  5. Carefully place the cooked eggs atop the ricotta layer.
  6. Season with salt and pepper to taste, and, if desired, garnish with fresh herbs.
