Classic Sourdough Banana Bread with Blueberries

A delightful banana bread that combines the tangy depth of sourdough with the sweetness of ripe bananas and a burst of fresh blueberries.

  • 3 ripe bananas, mashed
  • 1 cup sourdough starter
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, combine the mashed bananas, sourdough starter, sugar, melted butter, eggs, and vanilla extract. Mix until well combined.
  3. In another bowl, whisk together the baking soda, salt, and flour.
  4. Slowly add the dry ingredients to the banana mixture. Stir just until everything is combined—do not overmix!
  5. Gently fold in the blueberries, taking care to keep them whole and not burst.
  6. Pour the batter into the prepared loaf pan, smoothing out the top.
  7. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For best flavor, always use super ripe bananas. Can experiment with mix-ins like walnuts or chocolate chips.
