  • 1 tablespoon baking powder

  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup cinnamon sugar (for topping)

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until combined.
  2. In another bowl, combine the milk, egg, melted butter, and vanilla extract. Mix until well blended.
  3. Pour the wet mixture into the dry ingredients. Gently stir until just combined; don’t overmix.
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  7. Remove from the skillet and sprinkle with cinnamon sugar while they are still warm.
  8. Serve warm with your favorite toppings.
