Spinach & Cheese Omelette

A delightful and quick dish featuring fresh spinach, creamy havarti cheese, and aromatic garlic, perfect for breakfast, lunch, or dinner.

  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/2 onion, diced
  • 2 cups fresh spinach
  • 3 cage-free organic eggs
  • 1 slice havarti cheese
  • 1 tomato, sliced
  • Pinch sea salt
  • Pinch black pepper

Instructions

  1. Heat a nonstick frying pan over medium heat and add the olive oil.
  2. Sauté the diced onions and minced garlic until they turn translucent, about 3 minutes.
  3. Toss in the fresh spinach and cook just until it wilts, taking around 2 minutes.
  4. Crack the eggs into a bowl, sprinkle in a pinch of sea salt and black pepper, then whisk them together. Pour this mixture over the spinach mixture in the pan.
  5. After about 1 minute, use a spatula to carefully run around the edges of the omelette to prevent it from sticking.
  6. Once the eggs start to set, place the slice of havarti cheese over one half and carefully fold the other half over it.
  7. Cook for another minute, gently flipping the omelette and cooking for an additional 30 seconds.
  8. Serve immediately, garnished with sliced tomatoes on the side.

Notes

If there are leftovers, store them in an airtight container in the refrigerator for up to 2 days. Reheat on low heat on the stovetop.
