  • 1 teaspoon Salt
  • 2 cups Baby Spinach (finely chopped)
  • 1 cup Shredded Mozzarella Cheese (or Feta for a tangier flavor)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine the cottage cheese, olive oil, and egg (or flaxseed mixture for a vegan version) in a large mixing bowl.
  3. Whisk together the flour, baking powder, and salt in a separate bowl until well incorporated.
  4. Add the dry ingredients to the wet ingredients gradually. Mix gently until just combined.
  5. Fold in the finely chopped spinach and shredded mozzarella cheese until evenly distributed.
  6. Divide the dough into equal portions on a floured surface and shape each into a bagel-like ring.
  7. Arrange the formed bagels on the prepared baking sheet.
  8. Bake for 20-25 minutes, or until golden brown.
  9. Remove from the oven and let cool on a wire rack before serving.
