Spinach Cottage Cheese Flatbreads

Delightful and easy-to-make flatbreads filled with spinach and cottage cheese, perfect for a nutritious snack or appetizer.

  • 1 cup Cottage Cheese
  • 2 tablespoons Olive Oil
  • 1 large Egg (or flaxseed mixture for vegan option)
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 cups Baby Spinach, chopped
  • 1 cup Shredded Mozzarella Cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cottage cheese, olive oil, and the egg (or flaxseed mixture).
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually incorporate the dry ingredients into the wet mixture. Stir gently.
  5. Fold in the chopped spinach and shredded mozzarella.
  6. Shape the mixture into bagel-like forms and place them on the baking sheet.
  7. Bake for 20-25 minutes until golden brown. Let cool slightly before serving.
