Spinach Ham Breakfast Rolls

Delightful rolls filled with creamy scrambled eggs, fresh spinach, and savory ham, all wrapped in buttery dough.

  • 1 cup warm milk (about 105-115°F)
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • ¼ cup unsalted butter, melted
  • 3 ½4 cups all-purpose flour, plus more for dusting
  • 6 large eggs
  • ¼ cup milk or cream
  • Salt and pepper to taste
  • 4 ounces cooked ham, diced
  • 5 ounces fresh spinach, roughly chopped
  • 2 tablespoons butter or olive oil
  • ½ cup shredded cheese (optional)
  • 1 egg, beaten (for egg wash, optional)
  • 1 tablespoon milk or water (for egg wash, optional)

Instructions

  1. In a large bowl, heat the milk to 105-115°F. Stir in the yeast and sugar, then let it sit for 5-10 minutes until foamy.
  2. Mix in the melted butter and salt into the yeast mixture until well combined.
  3. Gradually add flour, starting with 3 ½ cups. Mix until combined, then knead the dough for 5-7 minutes until it’s smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover it, and let rise in a warm spot for 1-1 ½ hours or until doubled in size.
  5. In a separate bowl, whisk together eggs, milk or cream, salt, and pepper. In a skillet, heat butter or olive oil over medium heat, then sauté the spinach for 2-3 minutes until wilted. Pour in the egg mixture and scramble until just set. Add cheese if desired.
  6. Once the dough has risen, punch it down and transfer to a floured surface. Cut into 12 equal pieces and flatten slightly. Spoon the filling onto each piece of dough, fold edges over, and pinch to seal.
  7. Place rolls seam-side down on a baking sheet. If you want that golden color, brush with an egg wash. Cover and let rise for another 30 minutes.
  8. Preheat your oven to 375°F (190°C) and bake for 18-20 minutes or until golden brown.

Notes

For a lighter option, swap in turkey or veggie ham. You can also add herbs for added flavor.
