Starbucks Copycat Lemon Loaf

A moist and tangy lemon loaf that mirrors the delightful taste of the classic Starbucks treat.

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup vegetable oil
  • 2 tbsp unsalted butter, melted
  • 2 tbsp lemon zest (from about 2 lemons)
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp lemon extract
  • 1 cup powdered sugar
  • 2-3 tbsp fresh lemon juice (for glaze)
  • 1/2 tsp lemon zest (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl until well-blended.
  3. In a larger bowl, whisk the eggs with the sugar, sour cream (or yogurt), vegetable oil, and melted butter until the mixture is smooth and creamy.
  4. Stir in the lemon zest, fresh lemon juice, vanilla extract, and lemon extract until well combined.
  5. Gradually fold the dry ingredients into the wet mixture, stirring gently to combine without overmixing.
  6. Pour the batter into your greased loaf pan and bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. Mix the powdered sugar with the lemon juice for the glaze until smooth.
  9. Drizzle the glaze over the cooled loaf, and if desired, sprinkle with additional lemon zest.

Notes

For a lighter option, you can substitute sour cream with Greek yogurt.
