Strawberry Banana Scones

Delightful bakery treat bursting with fresh strawberry and banana flavor, perfect for brunch or a snack.

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 1 large banana, mashed
  • 1 cup strawberries, chopped
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. Add the cold, cubed butter to the dry mixture. Use a pastry cutter or your fingers to blend until it forms coarse crumbs.
  4. In a separate bowl, mash the banana and mix in the heavy cream, egg, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry mixture. Stir gently until just combined; don’t overmix!
  6. Fold in the chopped strawberries carefully.
  7. Turn the dough out onto a floured surface. Knead gently a few times until it holds together.
  8. Shape the dough into a circle about 1 inch thick, then cut it into wedges.
  9. Arrange the scones on a lined baking sheet.
  10. Bake for 15-20 minutes, or until they turn lightly golden.
  11. Allow them to cool slightly before serving.

Notes

Serve with clotted cream or coffee. Store in an airtight container for up to 3 days or freeze for a month.
