Strawberry Cheesecake Overnight Oats

  • 1/2 cup plain Greek yogurt
  • 3 oz cream cheese, softened
  • 1 cup almond milk
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 cup old-fashioned oats
  • 1 tbsp chia seeds
  • 1/2 cup strawberries, diced
  • Pinch of salt
  • 1/2 cup strawberries, chopped
  • 1 tbsp pure maple syrup (for reduction)

Instructions

  1. In a mixing bowl, combine the softened cream cheese, Greek yogurt, almond milk, pure maple syrup, and vanilla extract. Whisk until the mixture is smooth and creamy.
  2. Add the dry ingredients: old-fashioned oats, chia seeds, and a pinch of salt. Stir until thoroughly combined.
  3. Gently fold in the diced strawberries, ensuring an even distribution throughout the mixture.
  4. Transfer the mixture to an airtight container and refrigerate overnight.
  5. For the strawberry reduction, place the chopped strawberries and the additional maple syrup in a small saucepan over medium heat. Mash the softened strawberries with a fork and let it simmer for a few minutes until thickened.
  6. Remove from heat. You can then mix this fruity reduction into the overnight oats or keep it stored separately until you serve.
  7. To serve, spoon the overnight oats into a bowl and top with the freshly made strawberry reduction. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. The strawberry reduction can also be stored separately for about a week.
