Sweet Potato Breakfast Bowls

A nutritious and creamy breakfast bowl featuring roasted sweet potatoes, Greek yogurt, and fresh toppings.

Ingredients

  • 1 large sweet potato
  • 1/2 cup Greek yogurt
  • 1/4 cup granola
  • 1 banana
  • 1 tablespoon honey
  • Cinnamon to taste
  • Nuts or seeds (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the sweet potato and poke several holes in it using a fork.
  3. Place it on a baking sheet and roast for about 45-60 minutes, or until the potato is tender when pierced with a fork.
  4. Once baked and cooled, slice the potato open lengthwise and fluff the insides with a fork.
  5. Layer on Greek yogurt, followed by a sprinkle of granola, sliced banana, honey, and cinnamon to taste.
  6. For extra crunch, sprinkle nuts or seeds on top if desired.
  7. Enjoy your bowl!

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave and add fresh toppings.
