Sweet Potato Orange Hash

A vibrant and flavorful medley of sweet potatoes and oranges, perfect for brunch or weeknight dinners.

  • 2 large sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 medium oranges, peeled, segmented, and cut into chunks
  • 2 cups baby spinach leaves
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large eggs (optional)
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh cilantro or parsley, chopped

Instructions

  1. Preheat your oven to 425°F and line a large sheet pan with parchment paper.
  2. Toss the diced sweet potatoes, red bell pepper, and red onion with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper in a large mixing bowl.
  3. Spread the seasoned vegetables in a single layer on the prepared sheet pan. Roast for 20 minutes, stirring halfway through.
  4. Stir in the orange segments and baby spinach, mixing gently.
  5. Create four small wells in the vegetable mixture and crack an egg into each well, if desired.
  6. Return the pan to the oven and roast for an additional 8 to 10 minutes, until eggs are set.
  7. Sprinkle crumbled feta cheese and chopped fresh herbs over the hash before serving.

Notes

This dish can be reheated easily in a skillet for the best texture. Leftovers can be stored in the refrigerator for up to three days.
