Sweet & Sticky Pineapple Bourbon Chicken

A delicious and easy weeknight meal featuring tender chicken coated in a sweet pineapple and bourbon glaze.

  • 2 pounds chicken thighs or breasts
  • 1 cup pineapple chunks
  • 1/2 cup bourbon
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • Salt and pepper to taste
  • Cooked rice for serving
  • Fresh vegetables for serving

Instructions

  1. In a medium bowl, whisk together the bourbon, soy sauce, brown sugar, minced garlic, and ginger until combined.
  2. Season the chicken with salt and pepper, then heat a large skillet over medium heat.
  3. Add the chicken to the skillet and pour the bourbon mixture over it. Bring everything to a gentle simmer.
  4. Stir in the pineapple chunks, and let the chicken cook until it’s tender and cooked through, about 15-20 minutes. The sauce will thicken as it cooks.
  5. Serve the chicken hot over a bed of steaming rice or alongside fresh vegetables for a complete meal!

Notes

For a thicker sauce, allow the mixture to simmer a little longer after adding the pineapple chunks. If you prefer a kick, add a dash of red pepper flakes to the sauce.
