Tortilla Baked Eggs

A comforting and versatile brunch dish made with layers of flour tortillas, fluffy eggs, and fresh vegetables.

  • 4 Flour tortillas
  • 6 Eggs
  • 1 cup Spinach, chopped
  • 1 cup Tomatoes, diced
  • 1/2 cup Cottage cheese (optional)
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon Olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a baking dish with olive oil to prevent sticking.
  3. Lay the flour tortillas in the dish, overlapping slightly if necessary to create a sturdy base.
  4. Whisk together the eggs with a pinch of salt and pepper until well combined.
  5. Fold in the chopped spinach and diced tomatoes into the egg mixture to ensure they’re evenly distributed.
  6. Pour the egg mixture evenly over the tortillas, making sure that all the vegetables are equally spread out.
  7. Dollop cottage cheese on top for added creaminess, if using.
  8. Place the dish in the preheated oven and bake for 20-25 minutes, or until the eggs are fully set.
  9. Allow the dish to cool for a couple of minutes before slicing and serving.

Notes

Consider adding cheese or fresh herbs for extra flavor. Leftovers can be reheated in the microwave or oven.
