  • 1 lb Beef sausage
  • 1 cup Milk
  • 2 tbsp Flour
  • 2 tbsp Butter
  • Salt to taste
  • Pepper to taste
  • Cheese (optional)
  • Green onions (for garnish, optional)

Instructions

  1. Preheat your oven and cook the tater tots according to the package instructions until they are crispy.
  2. Cook the beef sausage in a skillet over medium heat until it’s browned, stirring occasionally.
  3. Add butter and flour to the skillet to create a roux once the sausage is ready. Gradually whisk in the milk, stirring continuously until smooth. Season with salt and pepper.
  4. Scramble the eggs in a separate pan over low heat until fluffy and just slightly set.
  5. Assemble the bowl starting with crispy tater tots, followed by the scrambled eggs and beef sausage gravy. Sprinkle cheese if desired, and garnish with chopped green onions.

Notes

For a lighter version, use turkey or plant-based sausage. This dish can be prepped ahead; just reheat before serving.
