Vanilla Raspberry Chia Pudding

  • 1-2 teaspoons maple syrup or honey (optional)
  • ½ cup fresh or frozen raspberries
  • Fresh raspberries and mint leaves for garnish (optional)

Instructions

  1. Combine the chia seeds, almond milk, vanilla extract, and your choice of sweetener in a bowl. Stir well to ensure everything is mixed together.
  2. Cover the bowl and refrigerate for at least four hours, or ideally overnight. Stir the mixture after 30 minutes to prevent clumping.
  3. Once the chia pudding has set, mash or blend the raspberries to your desired texture—whether you prefer it smooth or a bit chunky.
  4. Layer the chia pudding and mashed raspberries in individual serving glasses. For a beautiful touch, sprinkle some fresh raspberries or mint leaves on top before serving chilled.
