Air Fryer Egg Bites

Healthy, protein-packed snack made with eggs, cottage cheese, and veggies, perfect for quick breakfasts or meal prep.

Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup chopped vegetables (spinach, bell peppers, etc.)
  • 1/2 cup shredded cheese (cheddar, mozzarella, etc.)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your air fryer to 300°F (150°C).
  2. Whisk together the eggs, cottage cheese, salt, and pepper until smooth.
  3. Stir in the chopped vegetables and shredded cheese until well combined.
  4. Pour the mixture into silicone muffin cups or an egg bite mold, filling each about 3/4 full.
  5. Place the molds in the air fryer and cook for 12-15 minutes, or until the egg bites are completely set.
  6. Let them cool for a few minutes before gently removing from the molds. Enjoy!

Notes

Feel free to customize with different vegetables and cheeses. These can be made ahead and stored for up to 4 days in the fridge or frozen for longer.
