Apple Yogurt Pancakes

Delightful pancakes combining the sweetness of apples and the tanginess of yogurt, perfect for breakfast or brunch.

  • 1 cup all-purpose flour
  • 1/2 cup plain yogurt (Greek or regular)
  • 1 cup milk
  • 1 large apple, grated
  • 1 large egg
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil (plus more for cooking)
  • Optional: Chopped nuts or raisins

Instructions

  1. Whisk the flour, baking powder, cinnamon, and salt together in a large bowl until well combined.
  2. Mix the yogurt, milk, egg, sugar, and vegetable oil together in a separate bowl until smooth.
  3. Fold the grated apple into the wet ingredients.
  4. Combine the wet mixture with the dry ingredients, stirring gently until just mixed.
  5. Preheat your non-stick skillet or griddle over medium heat and lightly coat with vegetable oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip the pancakes and cook for another 2-3 minutes until golden brown.
  8. Keep pancakes warm in a low oven while cooking the remaining batter.
  9. Serve warm with maple syrup or your favorite toppings.

Notes

To store leftovers, let pancakes cool completely and place in an airtight container. They can be refrigerated for up to 3 days or frozen for up to 2 months.
