Baked Cottage Cheese Eggs

  • 1 cup Cottage Cheese
  • 4 large Eggs
  • 1/2 cup Parmesan Cheese
  • 2 tablespoons Fresh Chives
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • Salt to taste
  • Pepper to taste
  • 1 cup Bell Peppers (drained)
  • 1 cup Spinach
  • 1/2 cup Sun-Dried Tomatoes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cottage cheese, eggs, and Parmesan cheese in a large mixing bowl. Stir until everything is well-blended.
  3. Add the fresh chives, garlic powder, paprika, salt, and pepper. Mix thoroughly.
  4. Fold in the drained bell peppers, spinach, and sun-dried tomatoes until evenly distributed.
  5. Pour the mixture into a greased baking dish and spread it out evenly.
  6. Bake for 25-30 minutes, or until the top is golden and the center is fully set.
  7. Cool slightly before cutting into squares and serving.
