Baked Cottage Cheese Eggs

  • 4 large Eggs
  • 1/2 cup Parmesan Cheese
  • 2 tablespoons Fresh Chives
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • Salt to taste
  • Pepper to taste
  • 1 cup Bell Peppers
  • 1 cup Spinach
  • 1/2 cup Sun-Dried Tomatoes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together cottage cheese, eggs, Parmesan cheese, chives, garlic powder, paprika, salt, and pepper until smooth and creamy.
  3. Gently fold in the bell peppers, spinach, and sun-dried tomatoes.
  4. Pour the mixture into a greased baking dish and spread it evenly.
  5. Bake in the preheated oven for 25-30 minutes until the edges are browned and the center is set.
  6. Allow it to cool slightly before slicing. Serve warm.

Notes

For extra creaminess, use full-fat cottage cheese. Experiment with different herbs and vegetables to suit your taste.
