Baked Feta Eggs

A trendy and comforting dish combining feta cheese, eggs, cherry tomatoes, and fresh spinach, perfect for breakfast or brunch.

  • Feta cheese
  • 4 large eggs
  • 1 cup cherry tomatoes
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the feta cheese right in the center of a baking dish.
  3. Surround the feta with cherry tomatoes and a generous amount of fresh spinach.
  4. Drizzle olive oil over the feta and vegetables.
  5. Season with salt and pepper, and sprinkle on red pepper flakes if desired.
  6. Create small wells in the mixture and crack the eggs into these wells.
  7. Slide the baking dish into the preheated oven and bake for 20-25 minutes, or until the eggs are set to your liking.
  8. Serve warm and enjoy!

Notes

For a creamier texture, add a splash of cream when cracking the eggs. This dish can be prepared the night before for convenience.
