Banana Oatmeal Pancakes

Delicious and healthy pancakes made with ripe bananas and rolled oats, perfect for breakfast or a snack.

Ingredients

  • 1 ripe banana
  • 1 cup rolled oats
  • 1 cup milk (or plant-based milk)
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Cooking spray or oil for the pan

Instructions

  1. Blend the ripe banana, rolled oats, milk, eggs, baking powder, cinnamon, and salt until smooth.
  2. Preheat a non-stick skillet over medium heat, lightly coating it with cooking spray or oil.
  3. Pour 1/4 cup of the batter onto the skillet for each pancake.
  4. Cook for 2-3 minutes until bubbles form on top, then flip and cook for another 1-2 minutes until golden brown.
  5. Serve warm with your favorite toppings such as maple syrup, fresh fruit, or yogurt.

Notes

Store leftover pancakes in an airtight container in the refrigerator for up to 3 days or freeze for later enjoyment.
