Bangin Breakfast Potatoes

Crispy bacon and golden potatoes seasoned with spices and drizzled with maple syrup make for the perfect breakfast side dish.

Ingredients

  • 4 medium golden potatoes (or sweet potatoes)
  • 2 tablespoons olive oil (or avocado oil)
  • 4 slices bacon
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Old Bay seasoning
  • 2 cloves garlic (minced)
  • 2 tablespoons pure maple syrup
  • 1 tablespoon parsley (or chives, chopped)

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy. Remove from skillet and set aside, leaving drippings in the pan.
  2. Chop potatoes into bite-sized chunks.
  3. Drizzle oil into the skillet and increase the heat to medium-high.
  4. Add potato chunks to the pan, season with salt, pepper, and Old Bay seasoning.
  5. Cook for 10-15 minutes, stirring occasionally, until golden brown and tender.
  6. Add minced garlic and sauté for 1-2 minutes until fragrant.
  7. Crumble cooked bacon over the potatoes and drizzle with maple syrup just before serving.
  8. Garnish with chopped parsley or chives to enjoy!

Notes

For extra crispy potatoes, cut them into uniform sizes. Optional: add diced bell peppers or onions for a veggie boost, or sprinkle cheese during the last cooking minutes.
