Berry Protein Pancake Bites

Healthy, bite-sized pancakes bursting with the flavors of ripe bananas and fresh berries, perfect for breakfast or as a snack.

  • 1 cup protein powder
  • 1 cup oats
  • 2 ripe bananas, mashed
  • 1 cup berries (e.g., blueberries, strawberries)
  • 1 cup almond milk
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin.
  2. Mix together the protein powder, oats, baking powder, and salt in a large bowl.
  3. Combine the mashed bananas, almond milk, and vanilla in another bowl. Stir until smooth.
  4. Pour the wet mixture into the dry ingredients, and stir gently until just combined.
  5. Fold in the berries to ensure they are evenly distributed.
  6. Spoon the mixture into the mini muffin tin, filling each cup about two-thirds full.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow them to cool before indulging in these delicious bites.

Notes

Best enjoyed with a drizzle of maple syrup or a dollop of Greek yogurt. Can be stored in the refrigerator for 3-5 days or frozen for longer preservation.
